About Yiayia’s Greek Kitchen

Opening soon in Upper Kirby, Yiayia’s Pappas Greek Kitchen is a modern, elevated dining experience inspired by our family’s vivacious matriarch, Yiayia Mary. From vibrant murals to sprawling olive trees, the space is filled with warm energy and a sense of welcome. The air is rich with the scent of roasted lamb, sizzling cheese, and freshly baked pita, with authentic Greek recipes prepared using fresh ingredients and thoughtful technique.

At the bar, craft cocktails and a robust wine list invite guests to unwind and savor every moment. With over 300 seats and semi-private dining options, Yiayia’s is designed for connection. It’s the kind of place where you feel instantly at home, where the food delights and the atmosphere invites you to stay awhile.

Yiayia Mary believed that life is best lived around a table with good food, great company, and a cocktail in hand. We’re dedicated to honoring this spirit in every dish we serve and every moment we create.

Meet the GM

Carlos was born and raised in Houston, Texas (Klein to be precise – Go Bearkats!). His passion and curiosity for wine sparked early on in his hospitality journey which led him to pursue a career with Pappas Bro's Steakhouse. Carlos joined the Galleria location in 2016 as a Server, quickly standing out for his dedication to hospitality and exceptional service. Within a year, he was promoted to Restaurant Manager. In May 2023, Carlos took on the role of General Manager at Little's Oyster Bar, where he continued to lead with energy, precision, and heart. Now, Carlos steps into an exciting new chapter as the General Manager of Yiayia's Pappas Greek Kitchen. He compares each service to a theater show and once the doors open, it's showtime! Carlos believes everyone plays an important role in providing superior service.

Fun facts:

  • His favorite pastimes include exploring the vibrant city of Houston with his 1-year-old American Bully Bruce and the never-ending pursuit for the next best local dining experience.

  • When asked about his favorite food, he initially reminisced about enjoying a piece of Hudson Valley Foie Gras with a glass of Sauternes but then decidedly chose “barbacoa street tacos with a cold horchata from the taco truck on west Alabama.”

  • Carlos still remembers all the words to the early 2000s song, “Seventy times 7” by Brand New.
